Happy Tuesday, my friends! We have been on Summer Break for just over a week, and we're finally starting to adjust to our new normal. We are just as busy as ever, but it's nice to be able to sleep in! After wrangling four kids all day, I don't have the time or the energy to waste on complicated recipes for dinner. Simple slow cooker recipes, like this Easy Cheesy Crock-Pot Penne, are my go to this Summer!
Besides, I don't really want to stand over a hot stove or turn on the oven when it's so hot outside! Throwing all the ingredients into my Crock-Pot is a much easier, quicker, and cooler option. It only takes a few minutes of prep, then I can get back to child wrangling while it cooks!
I'm not sure if I've ever mentioned it before, but I was a vegetarian for over 15 years. I started to eat meat again while I was pregnant with Dylan, because my iron was super low. I'm no longer a vegetarian, but I eat VERY little meat, rarely eat red meat, and prefer meatless recipes over anything else. Although I do have to cook meat several times a week to please my husband, he is willing to eat some meatless recipes.
This Easy Cheesy Crock-Pot Penne is loved by everybody in my family! It's definitely not a fat-free recipe, but it sure is delicious! After all, cheese makes everything taste better, right?!?
Easy Cheesy Crock-Pot Penne
Ingredients:
- 2 lbs Penne
- 48 oz pasta sauce
- 15 oz tomato sauce
- 15 oz ricotta cheese
- 2 cups Italian blend shredded cheese
Make it:
1. Pour 24 oz of pasta sauce into the bottom of the slow cooker.
2. Pour 1 lb of uncooked Penne on top of the pasta sauce.
3. Spoon half of the ricotta cheese (7.5 oz) on top of the pasta.
4. Pour half of the tomato sauce (7.5 oz) on top of the ricotta cheese.
5. Top with 1 cup Italian blend shredded cheese.
6. Repeat steps 1-5 to make a second layer.
7. Cook on low for 3-4 hours.
I always serve this deliciously cheesy pasta with garlic bread and a garden salad. My family absolutely loves it! There are never any leftovers.
Making Easy Cheesy Crock-Pot Penne saves me so much time! I can usually make it by memory, but I made this helpful recipe card, so I don't forget any ingredients when I create my meal plan and grocery shopping list. I printed it out, slid it into a protective sleeve, and placed it in a small binder that holds my favorite recipes. Feel free to do this same!
The first time I made this recipe, my entire family fell in love, so I added it to my monthly rotation! It's so hard to find recipes that everyone in my family will eat, so when I do, it becomes a go to recipe. Easy Cheesy Crock-Pot Penne is one of those recipes that will please any pasta-loving family!
