Weekly Meal Prep: Pasta Lunches On-The-Go 3 Different Ways

Life is unbelievably busy these days. With 4 kids in school and a multitude of activities and commitments, my days are booked solid. Although Grant spends his days in an office, he is every bit as busy. Our kids are always well fed, but Grant and I often end up skipping meals in the midst of all the chaos. Eating lunch on the go is our new normal!


So many changes came our way over the past 6 weeks. Grant got a big promotion which means he's spending a lot more time at the office. Most days he leaves before the kids go to school and doesn't get home until 8 PM. He's so busy at work that he only has a few minutes to eat.

My new normal now includes picking Lily up from Kindergarten every day around noon, followed by preschool drop-off and pickup for Liam three times a week. On those three days I never even make it home until well after lunchtime. At that point, eating gets pushed aside because that's when I try to cram in as much blog work as I possibly can before I have to leave again to get Liam.

Grant and I don't want to live off of fast food during this phase in our lives but it's just as bad to skip our meals. We knew something had to change so we came up with a list of lunches that we could eat quickly and easily on the go or at our desks!

Sandwiches get boring and soup is too messy but we both agreed that we loved pasta! (Who doesn't?!?) There are so many ways to spruce up pasta. We just needed to do it in a way that wasn't messy. (Note: NO RED SAUCE!) We also needed to find containers that were perfect for our on-the-go meals.
